Chef Javier Alarco’s quick and easy recipe is a hit with University of Waterloo students as well, and is perfect for summer grilling.

The five years that University of Waterloo executive chef Javier Alarco spent abroad creating meals for high-end hotel guests – from rock stars to royalty – in Israel, Morocco and Iran helped him refine his mouth-watering Middle Eastern kofta mix.
“The combination of ground beef, assorted ingredients traditionally associated with the Middle East, and charcoal grilling gives this meal a wonderful flavour profile,” he says. “It’s quick and easy to make and can be done on a gas grill or grill pan if charcoal isn’t an option. The biggest part of producing koftas is getting the ingredients.”
